Sweet Garbanzos in Gluten-Free Chili

(This sweet, rich, and versatile treat serves 4-to-6 hungry people)

Ingredients:

  • 2 Tablespoons of Vegetable Oil. *
  • 1 and 1/2 Pound of Lean Ground Beef or Chuck.
  • 1/2 of a large sweet Yellow or White Onion (Diced about 1-inch squares).
  • 1/2 of a Green Bell Pepper (Diced about 1-inch squares).
  • 1, 14 ounce Can of Garbanzo Beans (drained).
  • 2, 14 ounce Cans of Whole Peeled Tomatoes (Also add water from these two cans to the mixture).
  • 1, 8 ounce can of tomato sauce. *
  • 1/4 teaspoon Garlic Salt. *
  • Salt (Sprinkle to taste).
  • Ground Black Pepper (Sprinkle to taste).
  • 1/4 teaspoon Ground Cumin.
  • Ground Chili Powder (Sprinkle to taste).
  • Ground Ciniman  (Sprinkle to taste).
  • 3 Tablespoons of Brown Sugar. *

 Process:

  1. In 2 Quart Sauce Pan, Saute Onions and Peppers in oil for about 10 minutes, then remove into holding dish.
  2. Cook Ground Beef in Sauce Pan with light seasoning (salt and pepper), then discard liquid fat.
  3. Add Onions and Peppers back into the Sauce Pan with the Beef.
  4. Add the Diced, Whole Peeled Tomatoes with their canning water into the Sauce Pan.
  5. Add spices and heat ingredients to a boil, for one minute.
  6. Reduce heat to a light simmer, and let simmer for about an hour.
  7. After about 45 minutes, add the Garbanzo Beans (drained).
  8. After about 55 minutes, stir in the tomato sauce and the brown sugar.
  9. After ingredients is back to full simmer, taste and add additional spice as desired.
  10. Let cool slightly, top with (either/or) a few tables spoons of Grated Cheddar Cheese, Diced Purple Onions, Sour Cream or Fresh Diced Scallions.

Creative Alternatives:

  • To easily convert this dish into very Southern Brunswick Stew, one might add about:
    • 1/2 of a 15 oz can of corn (drained),
    • 1/2 of a 15 oz can of butter beans (drained), 
    • A few ounces of cooked Chicken and Pork (cut or pulled into very small pieces).
  • For a more conventional Chili, one could add some drained canned pinto beans and maybe even some hot peppers.
