(Serves 3-4 Hungry Adults.)

Ingredients:

     Fried Chicken:

  • 1 Med-Large 12 Ounce (plus) Boneless, Skinless Fresh Chicken Breast, cut into pieces about 1-inch, cubed.
  • 1 Fresh Egg.
  • 1/3 Cup of Fresh Milk.
  • 1 Teaspoon of Honey.
  • 3/4 Cup of Gluten-Free Corn Meal. *
  • Salt.
  • Ground Black Pepper.
  • Garlic Salt. *
  • Ground Chili Pepper.
  • 1/2 Cup of Vegetable Oil. *

     Rice Mixture:

  • 1 Cup of Gluten-Free White Rice. *
  • 2 Cups Fresh Water.
  • 1 Teaspoon of Gluten-Free Chicken Bullion. *
  • 1/4 Cup of Diced Fresh Tomato.
  • 1/4 Cup of Small (Frozen or Fresh) Broccoli Sprigs. *
  • 1 Tablespoon of Butter. *
  • 1 Tablespoon of Grated Parmesan Cheese. *
  • Juice of 1/2 Fresh Lemon. *

 Process:

     Rice:

  1. Heat water with pinch of salt, Chicken Bullion, and butter to boil.
  2. Reduce Heat.
  3. Add Rice and Tomatoes and cover to simmer as directed on Rice package (usually 15-20 minutes).
  4. After about 12 minutes, add Broccoli Sprigs.

     Chicken Frying:

  1. Heat Oil in small fry pan on Medium for about 10 minutes.
  2. Lay Chicken pieces out and season both sides with Salt, Pepper, and Garlic Salt.
  3. In small mixing bowl, mix 1 beaten Egg with Milk and Honey.
  4. Place Corn Meal in small bowl.
  5. Season both liquid and Corn Meal with Salt, Pepper, Garlic Salt and Chili Powder.
  6. Fry Chicken on both sides until done.
  7. Drain off Chicken Oil.
  8. Cut Chicken into Bite-Size Pieces.
  9. Place Hot Chicken Pieces in bowl with 1/4 Cup of Soft Butter.
  10. Gently Mix Ingredients to Coat Chicken.  (Can add diced Green Onions or Bacon Bits * here if desired).
  11. Place Rice in Servings on Dishes and Top with Buttered Chicken Pieces.
  12. Sprinkle with Fresh Lemon Juice and/or Parmesan Cheese.

AND for a kinda Different, BUT Delicious Taste:

  • Sprinkle with Soy Sauce * just before serving.
