Gluten-Free Pepperoni Hash Brown Pizza (c.2009, WTB)

  I know it sounds funny, but at first, I could not decide whether this was a form of lasagna or a version of pizza.  But given that it was absent the ricotta cheese and loads of seasoned ground beef and saucy topping, I opted for the good old 6th Century B.C. Pizza.

  What does it look like to you?

  OK… Anyway… So, this Gluten-Free Pepperoni Casserole Dish Hash Brown Pizza was just incredible!  Even after being left over and reheated… like any great pizza…. or casserole… it was delicious!

(Serves 3-to-4 children or two hungry adults.)

Ingredients:

  • 4 Hash Brown patties. *
  • 4 to 6 large Tablespoons of Spaghetti (or Pizza) Sauce (choose your flavor). *
  • 4 Ounces of Grated Mozzarella Cheese. *
  • 6 Stuffed Green Olives (Sliced and Diced). *
  • 1/8th Cup of Diced Onion.
  • 40 (or more) pieces of Pepperoni. *
  • 2 Slices of Ham (Diced). *
  • Garlic Salt. *
  • Grated Parmesan Cheese. *
  • 1 Tablespoon of Vegitable or Olive Oil. *

Process:

  1. Preheat oven to 400 degrees farenheit.
  2. Take a small casserole dish (7 – 9 inches).

  3. Oil the bottom and sides of the dish.
  4. Place two of the Hash Brown Patties in the bottom, side-by-side.  (They do not need to be thawed).
  5. Spoon on 2-to-3 large Tablespoons of Spaghetti or Pizza Sauce.
  6. Put half of the ingredients (i.e., pepperoni, onions, ham, olives, mozzarella cheese, and parmesan cheese on top of this.
  7. Repeat the same process as in step #6 for the next layer.
  8. Except this time, add more cheese to the top and sprinkle also with Garlic Salt.
  9. Place into the center of the oven and bake uncovered for about 25 minutes.
  10. Remove from oven, let cool a few minutes, cut and serve.

* Be sure to use Gluten-Free Brands of each of these ingredients.
