Linda’s Gluten-Free Rice Chex Crust Cheesecake

(This is a wonderfully innovative and delicious recipe that serves about 10 people.)

Looks Great! Tastes Better!!! (c.WTB, 2009)
Crust:
Crust Ingredients:
- 3 cups of crushed Rice Chex cereal. * G-F Brand.
- 1 and 1/2 tablespoon of granulated sugar.
- 1 teaspoon of cinnamon.
- 3 tbsp of melted butter. * G-F Brand.
Crust Process:
- Mix all the Crust ingredients together and place in a 9-inch spring-form pan.
- Mold into crust.
Cake:
Cake Ingredients:
- 3 (8oz) packages of cream cheese. * G-F Brand.
- 1 cup granulated sugar.
- 2 tbsp of corn flour. * G-F Brand.
- 1 tsp vanilla extract. * G-F Brand.
- 3 eggs.
- 1/4 cup milk.
Cake Process:
- Preheat oven to 350 Fahrenheit.
- Mix all these ingredients until smooth and ready to pour into crust.
- Bake at 350 degrees Fahrenheit for 40 minutes.
- Cool for 2 hrs.
- Gently extricate crust from sides of pan with a butter knife.
- And remove side panel of pan.
- Chill for 4 hrs.
- Let it thaw a bit and then serve.
Naturally one can top this dish with a variety of gluten-free dessert toppings (i.e., Whipped Cream *, Fresh Fruit, Chocolate Sauce *).
* Be sure to use a Gluten-Free Brand of this ingredient.
