Linda’s Gluten-Free Meatloaf

Linda’s Gluten-Free Meatloaf
(Serves 5 to 6 Adults)
Ingredients:
- 2 to 2 & 1/2 Pounds of Lean Ground Beef.
- 1 fresh Egg.
- 1/2 Cup Gluten-Free Ketchup. *
- 1 Large Onion (white or yellow) (diced).
- 1 to 1 & 1/2 fresh Green Bell Peppers (diced).
- 3 Cups Gluten-Free Potato Chips (measure prior to crumbling). *
- 1 teaspoon Black Pepper.
- 1 teaspoon Salt.
Process:
- Mix ingredients (except for 1/4 Cup of Ketchup and 1 Cup of Potato Chips (measure potato chips before crumbling) in large mixing bowl. *
- Place in large casserole dish.
- Top with remaining crumbled Potato Chips and remaining Ketchup. *
- Bake at 350 degrees Fahrenheit for 1 hour to 1 hour and 15 minutes.
- Serve.
Optional Variations:
- Add 2 cups of sliced fresh mushrooms to mix prior to baking.
- Top cooked loaf with shredded Gluten-Free cheese. *
* Be sure to use Gluten-Free versions of these ingredients.
